Pour a small amount of oil in the bottom of the slow cooker and add 1tsp garlic and cover bottom
Peel and slice carrots length ways and line bottom of slow cooker
Place chicken pieces (I used thigh fillets) on top of carrots
Season chicken with salt, pepper, coriander and rosemary (to taste) and then cover each fillet with 1tsp garlic
Pour 1/2 cup balsamic vinegar over the top
Dice onion and sprinkle over top
Cook on high for 4 hours or low for 8 hours
With half an hour to go, take off lid, place desired greens on top, and continue cooking until finished
Serve chicken on a bed of spinach and rest of veges on the side
