Balsamic Chicken & Veg

Slow cooker chicken & veg with a hit of balsamic flavour!

Ingredients
 

  • Oil
  • Minced garlic (1 tsp x 5-9)
  • 4-8 carrots
  • 4-8 chicken pieces
  • Salt
  • Pepper
  • Coriander
  • Rosemary
  • 1/2 cup balsamic vinegar
  • 1-2 onions
  • 1-3 cups greens (broccoli, beans, etc.)
  • Spinach

Instructions
 

  • Pour a small amount of oil in the bottom of the slow cooker and add 1tsp garlic and cover bottom
  • Peel and slice carrots length ways and line bottom of slow cooker
  • Place chicken pieces (I used thigh fillets) on top of carrots
  • Season chicken with salt, pepper, coriander and rosemary (to taste) and then cover each fillet with 1tsp garlic
  • Pour 1/2 cup balsamic vinegar over the top
  • Dice onion and sprinkle over top
  • Cook on high for 4 hours or low for 8 hours
  • With half an hour to go, take off lid, place desired greens on top, and continue cooking until finished
  • Serve chicken on a bed of spinach and rest of veges on the side

Notes

  • This recipe has a rather sharp balsamic taste (which I love!), but if you wanted to cut it down a bit, add a small amount of brown sugar or honey to help balance out the flavors. :)
