Stuffed potato boats

More then just a potato side dish

Ingredients
 

  • 4 raw medium washed potatoes
  • 4 slices short cut bacon chopped (visible fat removed)
  • 1 grated zucchini
  • 1/4tsp-1/2tsp cayenne pepper (black cracked pepper can be used instead)
  • 2 cloves crushed garlic
  • 1/2 cup grated tasty cheese
  • 1/2 cup sour cream
  • grated tasty cheese for topping (optional)
  • sour cream for serving (optional)
  • shallots for serving (optional)

Instructions
 

  • Cut potatoes in half length ways
  • Cut out insides with small sharp knife leaving around 1/2 centimetre of potato all round
  • In bowl place rest of ingredients and mix well
  • Fill potato halves with mixture
  • Place potatoes in a lined sc
  • Place a sheet of baking paper over potatoes or a tea towel under lid
  • Cook 5 hours low or until potatoes are soft
  • If having cheese topping sprinkle small amount of cheese over potatoes and cook 1/2 hour low leaving lid off to melt
  • Serve with a small amount of sour cream and chopped shallots if you wish
