Stuffed Roast Beef

Ingredients
 

Stuffing

  • 1Tablespoon Butter
  • 2. Rashes Bacon finely chopped
  • 1Onion finely chopped
  • 1 Clove Garlic or 1 tablespoon minced garlic
  • 1cup fresh breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 egg
  • 1 Tablespoon Wholegrain mustard
  • 2 Tablespoons of both chopped oregano and parsley
  • 1 tablespoon lemon rind

Other Ingredients

  • Beef approximately 2 kg piece
  • 50 ml red wine
  • 2 Beef stock cubes
  • 2 onions cut in half
  • Gravox or cornflour to thicken gravy

Instructions
 

  • Mix all stuffing ingredients together, alternately you can fry the bacon and onion
  • Cut A Deep cut in the beef and insert stuffing
  • Tie with strings to secure
  • Sit Beef on onions in bottom of the slow cooker
  • Pour wine and stock cubes over beef
  • On low 6 - 8 hours depending on Beef size
  • Baste occasionally and thicken juice with Gravox or cornflour
