Ingredients
1kg skinless chicken thigh fillets
300ml cooking cream
1/2 cup chicken stock liquid
2 tblsp of soy sauce (I used low salt version)
1/2 cup peanut butter
1 tblsp minced garlic
S&P to taste
Instructions
Place raw chicken fillets in slow cooker (whole)
Combine all other ingredients in a jug and whisk to combine well
Pour over chicken
Cook on low for 4.5hrs
Prior to serving I pulled apart/shredded chicken in the slow cooker
It comes apart easily just with two plastic utensils so as not to scratch your cooker
For low carb I serve mine on carb free konjac "pasta"
The rest of the family had theirs on regular pasta
