Ingredients
1 brown onion, halved, chopped
3 tsp garlic
1tbs butter
6-8 medium peeled potatoes cut into chunks
1/4 of a cauliflower chopped into florets
1 leek, pale section only sliced
4x rashers of bacon rind removed and diced
4 cups chicken stock (add more of needed)
400ml thickened cream
1 tsp parsley
1tsp thyme
2x bay leaves
Salt and pepper
Instructions
Pop all into a slow cooker (apart from cream) cook on low for 6 hours or until potato is tender. Remove bay leaves and then add the cream and blend until smooth.
Serve with a sprinkle of parmesan and some crusty bread
