Sweet & Sour Pork Rashers

This sweet & sour flavour packed pork rasher recipe was a huge hit with our kids! Served with brown rice and steamed broccolini for high fives all round!

Ingredients
 

  • 1kg pork rashers
  • 3/4 cup sugar
  • 1/2 cup salt reduced soy sauce
  • 1/2 cup white vinegar
  • 1 heaped teaspoon minced garlic
  • 1 heaped teaspoon minced ginger
  • 2 tablespoons of yellow mustard
  • 1/2 cup canned crushed pineapple
  • 1/2 red capsicum/pepper, sliced
  • 1/2 green capsicum/pepper, sliced
  • Salt and Pepper to season
  • 1 Tbsp oil to sear rashers with

Instructions
 

  • Cut rashes into thirds
  • Using a searing slow cooker (or pan on stove top) sear rasher pieces in oil for approx 5-10mins until sealed
  • If using stove return rashes to slow cooker bowl after sealing
  • Add capsicum slices
  • Combine all other ingredients and pour over pork and capsicums
  • Cook on high for 4-5hrs
  • For the last hour I added The Tea Towel Trick to thicken the sauce a little
  • Served with brown rice and steamed broccolini

Notes

  • Due to sugar content I only drizzled a little of the sauce over the finished pork for serving but you could add as much as you like over yours
