Sweet & Sour Pork Rashers
This sweet & sour flavour packed pork rasher recipe was a huge hit with our kids! Served with brown rice and steamed broccolini for high fives all round!

Ingredients
1kg pork rashers
3/4 cup sugar
1/2 cup salt reduced soy sauce
1/2 cup white vinegar
1 heaped teaspoon minced garlic
1 heaped teaspoon minced ginger
2 tablespoons of yellow mustard
1/2 cup canned crushed pineapple
1/2 red capsicum/pepper, sliced
1/2 green capsicum/pepper, sliced
Salt and Pepper to season
1 Tbsp oil to sear rashers with
Instructions
Cut rashes into thirds
Using a searing slow cooker (or pan on stove top) sear rasher pieces in oil for approx 5-10mins until sealed
If using stove return rashes to slow cooker bowl after sealing
Add capsicum slices
Combine all other ingredients and pour over pork and capsicums
Cook on high for 4-5hrs
For the last hour I added
The Tea Towel Trick
to thicken the sauce a little
Served with brown rice and steamed broccolini
Notes
Due to sugar content I only drizzled a little of the sauce over the finished pork for serving but you could add as much as you like over yours
