Creamy Country Chicken Casserole

Chicken with leek, potato, carrots and a creamy sauce ... a complete meal in one pot - right from your your slow cooker! Winner winner chicken dinner :)

Ingredients
 

  • 10 chicken drumsticks
  • 1 leek, sliced
  • 3 washed potatoes, diced chunky
  • Trimmed bunch of dutch carrots
  • 300ml cooking cream (it's a cream that resists splitting)
  • 1 sachet of chicken gravy
  • Salt and Pepper to season

Instructions
 

  • Place leeks and diced potato chunks on bottom of slow cooker
  • Lay chicken drumsticks over that
  • Add dutch carrots on top
  • Combine cream and gravy mix in a jug then pour over
  • Season with salt and pepper
  • Cook on HIGH for 5hrs

Notes

  • To serve gently remove carrots and chicken to serving plates. Use a slotted spoon to lift out the potatoes and add them to serving plate. Give the sauce a quick whisk then ladle that over serving plates.
  • Would be lovely also served with a crusty bread roll.
  • I kept the potato chunks fairly small chunks to ensure they cooked through
  • Would also work with boneless chicken and you could add other vegetables if you wished
  • A great one pot dinner for the whole family to enjoy
