Easy taco stew

Super yummy and easy. Could grate veggies to hide from fussy kids lol. I served mine in mini taco boats with grated cheese and sour cream.

Ingredients
 

  • 500gms beef mince
  • 1 onion
  • 1 tablespoon minced garlic
  • 1 red capsicum
  • 1 green capsicum
  • 1 yellow capsicum
  • 2 medium carrots
  • 1 can corn kernels drained
  • 1 can Mexican beans
  • I can diced tomatoes
  • 2 pkts salt reduced taco seasoning
  • 1 jar taco sauce or enchilada sauce

Instructions
 

  • Brown mince with onion and garlic.
  • Place in slow cooker.
  • Dice capsicums and carrots.
  • Add to meat.
  • Add contents of cans to slow cooker.
  • Add seasoning and sauce to slow cooker.
  • Stir well.
  • Cook on low 4-6 hours

  • I served mine in mini taco boats with grated cheese and sour cream but will try the leftovers with a baked potato and possibly Doritos
