Ingredients
1 litre of chicken stock
1/2 litre of beef stock
5 sweet potatoes peeled and cut
2 brushed potatoes washed peeled and cut
1 onion cut anyway
2 handfuls of diced bacon
2 teaspoons of minced garlic
Baby spinach leaves
300ml Thickened cream
Salt
Pepper
Chilli flakes
Mixed herbs
Instructions
Turn slow cooker on low
Cut up potatoes and onion
Add potatoes, onion, bacon, chicken/beef stock, garlic and herbs and spices to slow cooker
Cook on low for 7-8 hours
With half an hour to go blitz/mash potato until desired consistency ( I like some chunks in mine)
Then stir in the spinach and cream, pop the lid back on for the last half an hour then serve and enjoy :)
Notes
For a more thicker soup, drop it to 1/2 cup of beef stock and 1/2 cup of chicken stock and do the handy tea towel trick :)
And for more soup double the recipe :)
