Potato, Leek & Bacon Soup

A great warming and filling soup for winter!

Ingredients
 

  • 2kg Potatoes, peeled, roughly chopped
  • 2 leeks, washed, sliced (white section only)
  • 2tsp crushed garlic
  • 1tsp onion powder
  • 1Ltr Chicken Stock
  • Meaty smoked Ham Hock
  • Tray of Pork bones (optional)

Optional additions

  • Cream and Cheese (see method)

Instructions
 

  • Set slow cooker to sear (if your slow cooker doesn't have this function, use a fry pan)
  • Add a little olive oil, and fry off leek
  • Change setting to LOW
  • Add in garlic, potatoes, bones and hock
  • Pour stock over, and cook for around 4 hours on low
  • Remove smoked hock and pork/bacon bones, set aside to cool enough for ease of handling
  • At this point, I blitz the potato mixture.
  • Add meat (removed from bones) back into slow cooker, with a slug of cream (optional), and a good handful of tasty cheese (optional), salt and pepper - heat through, and serve with crusty bread
