Ingredients
1kg Leg of Lamb (bone in)
1 Lemon
1 & 1/2 tablespoons Paprika
1 tablespoon dried oregano
3 cloves of garlic, finely grated or minced
Small handful of fresh mint, roughly chopped
Salt and pepper
Instructions
Combine lemon juice, paprika, mint, oregano, garlic, salt and pepper in a bowl.
Rub all over the lamb
Put lamb in the slow cooker for 3 hours on high and 3 hours on low.
When the lamb is tender, cut or pull into chunks.
Brown lamb in the frying pan to get crispy then return to the slow cooker and the meat will absorb all the tasty cooking juices.
Serve in flat bread or wrap with salad and garlic sauce or however you like it!
