Mini Meringues

I decorated mine with cream & pink & blue sprinkles, to take to a gender reveal.

Ingredients
 

  • 6 egg whites
  • 1 & 1/4 cup caster sugar
  • 2 tsp corn flour
  • 1 tsp vinegar
  • 1 tsp vanilla essence
  • Few drops of food colouring

Instructions
 

  • Whisk egg whites, until soft peaks form, gradually add sugar, 1 tbsp at a time, well after each addition.
  • Mix until meringue is thick & glossy, until all sugar is dissolved.
  • Add corn flour, vinegar, & vanilla, & whisk until just combined, add a few drops of food colouring.
  • Put in slow cooker, lined with baking paper, tea towel under lid, cook on low for an hour & a half.
  • Leave in slow cooker until completely cold.
