Beef Stew

This recipe was recently published in the Slow Cooker for Kids Book. My grandsons love it. Can be served with dumplings too however my girls prefer me to cook up puff pastry squares.

Ingredients
 

  • 1 kg (2lb 3 oz) diced beef
  • 1 onion, dice
  • 1 tablespoon olive oil (optional)
  • 4 carrots, diced
  • 6 potatoes, diced
  • 4 celery stalks, diced
  • 40 g (1 1/2oz) packet French onion soup mix
  • 1/4 cup Worcestershire sauce
  • 100 g (3 1/2 oz) tomato paste or
  • 1/3 cup tomato sauce (ketchup)
  • 400 g (14 oz) can diced tomatoes
  • 2 cups frozen peas
  • 2 tablespoons gravy powder

Instructions
 

  • If you like, brown the beef and onion in oil in a frying pan. Otherwise, place straight into slow cooker with vegetables, soup mix, Worcestershire sauce, tomato paste and tomatoes.
  • Fill the empty can with water, swish around and add to slow cooker.
  • Cover and cook on LOW for 6-8 hours.
  • Add peas 30 minutes before end of cooking time.
  • At the end of cooking time, stir in the gravy powder to thicken the gravy.

Notes

  • Add other veggies like turnip, swede etc. if you like.
