Place carrots and potatoes in slow cooker bowl
Scatter bacon, leek and garlic over carrots and potatoes
Season beef with cracked pepper and place in slow cooker bowl
Place eschallots and mushrooms around beef
Add bay leaves and thyme
Cook on LOW for 8hrs (Contempo 5.5L sc)
Mix the cornflour with 2 tblspns of water
Remove beef, cover with foil and allow to rest for 10-15mins
Season vegetables with salt and pepper to taste, stir in cornflour mix and leave to thicken
Slice beef and serve with vegetables and sauce
