Ingredients
1 roast pork piece 1.5-2kg
2 onions, sliced
1 bottle of smoky bbq marinade
1 x 30g sachet of taco seasoning
Instructions
Add sliced onion to base of slow cooker
Remove any string from roast pork and place pork fat side down, on top of onion
Combine marinade and taco mix and pour over pork
Cook on high for 7hrs or low for 10hrs
BEFORE shredding pork remove and discard fat and rind layer
Serve pulled pork on soft white bread rolls with salad leaves
Note:
Don't be concerned if you see lots of liquid build up during cooking. Pork absorbs this when shredded into it
You can substitute the marinade for your favourite smoky bbq sauce bottle if you prefer
Great dish to self serve at your next party
