Beef Nachos

Ingredients
 

  • 500g beef mince
  • 435g can refried beans
  • 1/2 cup canned red kidney beans, drained & rinsed
  • 400g can diced tomatoes
  • 2 Tblsp tomato paste
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • — To Serve —
  • Corn or Tortilla chips
  • Grated cheese
  • Sour Cream
  • Mashed Avocado

Instructions
 

  • Combine all the nachos ingredients in the slow cooker
  • Cook on low for 5hrs
  • To serve, arrange chips on serving plates, spoon over nachos meat and top with grated cheese (see notes)
  • Add a dollop of sour cream and smashed avocado
  • — Notes —
  • We like to zap the nachos in the microwave for 30-60 seconds per plate to melt the cheese nicely before adding the rest of the toppings, but that’s optional :)
  • You can replace the 6 spices with a 40g sachet of taco type seasoning if you prefer to make an easier version.
