Satay Pulled Pork Poutine

Ingredients
 

  • 1-1.5kg boneless roast pork
  • 1 small brown onion, diced
  • 1 Tbsp minced garlic
  • 1 x 270g can full fat coconut cream
  • 3/4 cup smooth peanut butter
  • 1 Tbsp sweet chilli sauce
  • 1/4 cup (60ml) kecap manis (sweet soy sauce)
  • 2 tsp soy sauce
  • 1Tbsp brown sugar
  • 1tsp fish sauce

To serve

  • Crispy French fries (or even potato wedges)
  • Grated cheddar or mozzarella cheese (1-2 cups depending on numbers of serves)

Instructions
 

  • Remove any netting or string from roast pork
  • Place pork fat/rind side down into slow cooker
  • Combine all other ingredients and pour over pork - I like to use a stick blender to easily combine them
  • Cook on HIGH for 5.5hrs
  • Remove and discard fat layer from the pork
  • Shred meat and return to sauce for an additional 30mins turned down to LOW
  • Plate up crispy fries, spoon over pulled pork, top with cheese (cheese can be melted in oven or brief blast in microwave)
  • Serve hot and with a hearty appetite!!

Notes

  • You can of course skip the chips and cheese and just serve this as a Satay Pulled Pork

  • If you need longer cooking time you could also cook it on low but you'll need a good 8-10hrs for a lovely tender result to easily pull apart
