Chunky Beef and Veggie Casserole

Ingredients
500 – 800 grams of beef chopped into large chunks (I used rump)
4 small potatoes
2 carrots
Broccoli including stems
1 Large brown onion
1 small to medium sweet potato
1 Zucchini
4 Large Mushrooms
Pumpkin
½ cup frozen peas & corn
1 tin of chopped tomatoes
1 cup beef stock
1 teaspoon ground cumin seeds
1 teaspoon ground coriander
2 tablespoons Worcestershire sauce
1 tablespoon BBQ sauce
1 tablespoon Tomato sauce
½-1 teaspoon onion powder
Veggie salt & cracked pepper
Optional: Corn flour for thickening
Instructions
Chop all the veggies up into large chunks & put in slow cooker with meat & spices & sauces.
Cook on high 7 hours
Use a paste made with corn flour & water to thicken if needed the last 1-1/2 hour of cooking time.
I used a 5.5L slow cooker
Serve with bread or rolls or eat on its own
