1 large gold sweet potato, peeled and diced chunky
1Tbsp dried parsley
2-3Tbsp of gravy powder mixed with 2Tbsp warm water
Instructions
Place lamb shanks in 6L slow cooker and season generously with salt and pepper
Sprinkle over the dry stock powder
Top with tomatoes, vegetables and parsley flakes
Cook on low for 8hrs
Remove shanks and keep warm while you thicken sauces
Combine gravy powder with water and stir through over high heat to thicken cooking liquids – you can do this in a searing slow cooker or on stove top – it only takes 5-10mins
Plate shanks, spoon over the sauce and vegetables and serve with potato mash
