Winter Vegetable Curry
A spicy winter vegetable curry perfect as a quick vegetarian dinner
Serving: 4
Ingredients
- - 1 tsp cumin seeds
- - 1.5tsp tumeric
- - 1tbsp garam masala
- - red chilli powder as desired
- - salt and pepper
- - 1tsp minced ginger
- - 1tsp minced garlic
- - 1 brown onion
- - 4-5 tomatoes skinned and diced
- - 4 potatoes cubed
- - 1 can peas and corn
- - 1 can chick peas
Instructions
- 1. Saute cumin seeds until brown, add onion garlic ginger turmeric chilli and garam masala
- 2. Add tomatoes and cook with a little water until combined
- 3. Throw into slow cooker with a little water (enough for liquid to cover the veges) with veges and cook 4hrs on low (can also pressure cook for only 15mins)
- Serve with rice or fresh roti (plain flour and water pancake)

Hi, can i add potatoes, lentils and eggplant to this recipe. And if i can, should i pre-boil or cook them first or the time in the slow cooker will be enough?
It already has potatoes in it 🙂 If they are cut small enough no need to pre cook.
What veggies would you normally put with this
Would you put other veggies in with this other than the potatoes, peas and corn and tomatoes?
I imagine you could add whatever you like 🙂
I’d add sweet potato, pumpkin and carrot too
