Vietnamese Pork Chops with Watermelon Salad
Serving: 4
Ingredients
Pork chop marinade
- 2 shallots sliced thinly
- 1/4 cup reduced salt soy sauce
- 2 Tbsp fish sauce
- 2 Tbsp sugar
- 1/2 tsp hot chilli sauce
- 4 med thick cut chops approx 2 cm (pork belly or spare ribs would work just as well)
- 1/2 cup honey
Salad
- 2 Tbsp rice vinegar
- 1 tsp soy sauce
- 2 spring onions
- 1/2 tsp sugar
- 4 cups rocket
- 2 Tbsp oil
- 2 cups seedless watermelon rind removed diced chunky
- Ground black pepper
- Salt
Instructions
- Pork chops
- Place everything in the sc and cook low for 3 - 4 hours.
- Salad
- Whisk vinegar, soy sugar and oil together. In salad bowl place rocket and watermelon, and dressing. Season to taste and toss lightly
