Vietnamese Pork Chops with Watermelon Salad

Ingredients
 

Pork chop marinade

  • 2 shallots sliced thinly
  • 1/4 cup reduced salt soy sauce
  • 2 Tbsp fish sauce
  • 2 Tbsp sugar
  • 1/2 tsp hot chilli sauce
  • 4 med thick cut chops approx 2 cm (pork belly or spare ribs would work just as well)
  • 1/2 cup honey

Salad

  • 2 Tbsp rice vinegar
  • 1 tsp soy sauce
  • 2 spring onions
  • 1/2 tsp sugar
  • 4 cups rocket
  • 2 Tbsp oil
  • 2 cups seedless watermelon rind removed diced chunky
  • Ground black pepper
  • Salt

Instructions
 

  • Pork chops
  • Place everything in the sc and cook low for 3 - 4 hours.
  • Salad
  • Whisk vinegar, soy sugar and oil together. In salad bowl place rocket and watermelon, and dressing. Season to taste and toss lightly
