Vegetarian Chilli Con Carne
- Continental Chilli Con Carne Satchet
- 2 x Tomato/Pasta sauce jars
- 1 large eggplant
- 3 medium brown onions
- 2 medium capsicums
- 1 cup water
- 2 cups corn kernals
- 2 packets Quorn Meatballs
- 2 cups pasta
- Fresh grated Parmesan to serve
- Put all ingredients in Slow cooker except Pasta and Parmesan, on low for 8 hours.
- Half an hour before end add pasta and stir through.
- Optional: Serve with fresh grated Parmesan on top.
