A hearty soup of vegetables, split peas and chorizo

Equipment

  • 6 litre slow cooker

Ingredients
 

  • 500 gram Split peas packet
  • 1 small Butternut pumpkin
  • 1 onion
  • 6 small carrots
  • 1 zucchini
  • 2 chorizo sausages, sliced
  • 4 tsp Vegeta stock
  • hot water to fill slow cooker to 1-2 inches from top
  • Salt
  • Pepper

Instructions
 

  • Soak split peas in hot water while preparing vegetables
  • Chop all vegetables and add to slow cooker
  • Add in the peas (drained), chorizo, water and seasonings
  • Cook on HIGH for 6hrs
