Vegetable & Chorizo Soup
A hearty soup of vegetables, split peas and chorizo
Equipment
- 6 litre slow cooker
Ingredients
- 500 gram Split peas packet
- 1 small Butternut pumpkin
- 1 onion
- 6 small carrots
- 1 zucchini
- 2 chorizo sausages, sliced
- 4 tsp Vegeta stock
- hot water to fill slow cooker to 1-2 inches from top
- Salt
- Pepper
Instructions
- Soak split peas in hot water while preparing vegetables
- Chop all vegetables and add to slow cooker
- Add in the peas (drained), chorizo, water and seasonings
- Cook on HIGH for 6hrs
