Vegetable casserole
Serving: 4
Ingredients
- 1 Pumpkin cut into small chunks
- 2 Zucchini sliced
- 1 head of Broccoli cut bite sized
- 1 half Cauliflower cut bite sized
- 1 Onion chopped
- 1/2 Sweet potato peeled and sliced
- 2 Carrots peeled and sliced
- Can diced tomatoes
- Can chicken condensed soup
- Basil
- Mixed Italian herbs
- 1- 2 tsp Garlic
- hash browns
- grated cheese
Instructions
- Add everything except hash browns and cheese then top with hash browns and grated cheese
- Cook on high 4-6 hours
- Vegetarian version use pumpkin soup instead of chicken

This is awesome – we have had it 3 weeks in a row. We omit hash browns, cheese and carrot and instead use brussell sprouts (whole), 4 bean mix and our own mix of herbs. My partner absolutely adores it and it feeds the 2 of us for a whole week.
