Ingredients
 

  • 1 Pumpkin cut into small chunks
  • 2 Zucchini sliced
  • 1 head of Broccoli cut bite sized
  • 1 half Cauliflower cut bite sized
  • 1 Onion chopped
  • 1/2 Sweet potato peeled and sliced
  • 2 Carrots peeled and sliced
  • Can diced tomatoes
  • Can chicken condensed soup
  • Basil
  • Mixed Italian herbs
  • 1- 2 tsp Garlic
  • hash browns
  • grated cheese

Instructions
 

  • Add everything except hash browns and cheese then top with hash browns and grated cheese
  • Cook on high 4-6 hours
  • Vegetarian version use pumpkin soup instead of chicken

  1. This is awesome – we have had it 3 weeks in a row. We omit hash browns, cheese and carrot and instead use brussell sprouts (whole), 4 bean mix and our own mix of herbs. My partner absolutely adores it and it feeds the 2 of us for a whole week.
