Vegetable Bolognaise

Loaded with vegetables this chunky bolognese sauce makes for a filling meat free pasta sauce

Ingredients
 

  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 3 Celery sticks, diced
  • 3 large Carrots, diced
  • 350g Sweet Potato, diced
  • 350g Butternut, diced
  • 3 large Zucchini, diced
  • 2 or 3 (approx200g) Yellow Squash, diced
  • 200g Cauliflower, minced
  • 200g Mushrooms, minced
  • 200g Mushrooms, chopped
  • 200g Spinach, chopped
  • 300g Cherry Roma Tomatoes, halved
  • 150g Sundried Tomatoes, chopped
  • 3 Bay leaves
  • 1/2 cup Vegetable Stock
  • 1 jar Tomato and Basil Pasta Sauce (490g)

Instructions
 

  • Saute the onion, garlic and celery until just soft
  • Add stock and gently scrape vegetable bits off the bottom of bowl
  • Add carrot, sweet potato, butternut, zucchini, squash, cauliflower, mushrooms, tomatoes, pasta sauce and bay leaves to bowl
  • Cook for 8hrs on LOW (Breville 7L slow cooker)
  • Season to taste with salt and cracked pepper
  • Add spinach and stir through, cook for a further 30 mins or until spinach has softened
  • Serve with your choice of pasta

    Loved this! We made an extra large batch. It was great as a meat free sauce, then we froze the rest in portions as an easy way to add extra veg for future pasta dishes.
