1 kg beef mince

1 onion

1 egg

3-4 garlic cloves

2-3 carrots grated

1 zucchini grated

1/2 cup stuffing mix ( or bread crumbs)

2 tbs Greek yoghurt

Sprinkle of seasonal

Salt/pepper to taste

1 cup fresh herbs (basil & mint)

Cheese of choice (cubed)


2 tins chopped tomatoes/herb/garlic

1 jar passata(or any pasta sauce)

2 tbs tomato paste

Fresh herbs(basil & mint)


1Mix meatball ingredients well (not cheese)

2Flatten meat mix in Palm of wet hand and place cheese cube in middle. Roll into firm balls with wet hands.

3Add sauce and meatballs to sc.

4Cook for 3-4 hrs on low

Very easy and worked perfectly. Loved the addition of vegies – couldn’t really taste them but the result was a deloous dinner that didn’t feel too heavy.
The meatballs were a tad delicate so I was careful not to stir them or they may have broken up (I just swished the slow cooker around a bit to make sure they were coated with sauce). Season the meatball mix generously.
