Veg loaded cheese stuffed meatballs
Serving: 6
Ingredients
- 1 kg beef mince
- 1 onion
- 1 egg
- 3-4 garlic cloves
- 2-3 carrots grated
- 1 zucchini grated
- 1/2 cup stuffing mix ( or bread crumbs)
- 2 tbs Greek yoghurt
- Sprinkle of seasonal
- Salt/pepper to taste
- 1 cup fresh herbs (basil & mint)
- Cheese of choice (cubed)
- SAUCE
- 2 tins chopped tomatoes/herb/garlic
- 1 jar passata(or any pasta sauce)
- 2 tbs tomato paste
- Fresh herbs(basil & mint)
Instructions
- Mix meatball ingredients well (not cheese)
- Flatten meat mix in Palm of wet hand and place cheese cube in middle. Roll into firm balls with wet hands.
- Add sauce and meatballs to sc.
- Cook for 3-4 hrs on low

Very easy and worked perfectly. Loved the addition of vegies – couldn’t really taste them but the result was a deloous dinner that didn’t feel too heavy.
The meatballs were a tad delicate so I was careful not to stir them or they may have broken up (I just swished the slow cooker around a bit to make sure they were coated with sauce). Season the meatball mix generously.
