A lush creamy tomato pesto flavoured low carb chicken recipe!

Ingredients
 

  • 400g chicken fillets cut into chunks (I prefer thigh but breast is fine too)
  • 200ml cooking cream
  • 100g sun dried tomato pesto

Instructions
 

  • Place chicken into slow cooker, raw
  • Combine cream and pesto and pour over chicken
  • Cook on low for 3-4hrs
  • Less than 8g carbs per serve
  • Serve on it's own or with broccoli/cauliflower rice for a low carb side
  • Or with potatoes, rice or pasta if you enjoy carbs

  1. Very flavoursome.
    I had just over half the amount of chicken so adjusted the cream and pesto to just over half the amount suggested.
    Cooked on the Baby s.c
    Was cooked in 2.5 hrs but left for 3 hrs and the chicken was cooked perfectly soft and tender .
    Severe on the lcauli broc and sweet potoate rice from wollies.
    It’s a great belly warming meal on a freezing winters night.

  3. I have been making something similar to this for years. I add a around 1/2 milk extra, a tablespoon of toasted pine nuts and a 1/4 of sliced kalamata olives. We have it on pasta topped with Parmesan cheese . A huge favorite with my family.

  4. Cooked to recipe wth addition of half packet of frozen spinach portions.
    Delish as always.
    Was served on a bed of mash this time.

  5. So easy.
    Used 500g chicken and about 300ml cooking cream and 100ml normal cream. Added sliced mushroom and red capsicum. Cooked on low for 8 hours in my 5.5litre SC. Served with roasted carrot, zucchini and garlic brocollini and a little rice to mop up the sauce.

  6. I keep going back to this, I love it and make enough portions to have several available should I want it. I would also suggest adding some mustard to the cream, with the pesto. It doesn’t ideally help to thicken it, but it does add a little more flavour and the odd kick, depending upon the mustard used. I’ve also added any variations of veg too, but never too many – simples is best.

  7. This recipe is great if you are time poor. It literally only takes a couple of minutes to prepare and is super delicious

    (And yes, before you say cream you cook with, I don’t think I have seen such a thing on New Zealand shelves in my town)

  9. do you think this would work in the pressure cooker part of slow cooker as well please???sounds so delish..TIA..going to use coconut creal with the cornflour added like was suggested..

  12. what do you use when you can’t get sun dried tomatoes. Do you use fresh tomatoes pureed. ‘

    we don’t have sun dried tomatoes in Egypt only fresh and tomato puree.
