Toffee Apple Self Saucing Pudding

Ingredients
 

Toffee apple pudding.

  • 200g soft brown sugar
  • 200g self raising flour
  • 200g butter
  • 3eggs
  • Spoon vanilla extract
  • 2 apples peeled n diced

Topping

  • 300mls apple juice
  • 100g golden syrup
  • 100g soft brown sugar

Instructions
 

  • Beat butter and sugar.
  • Mix in eggs.
  • Add flour and vanilla.
  • Stir in apple chunks.
  • Put into greased slow cooker pot.
  • Put topping ingredients in a saucepan, heat enough to dissolve sugar.
  • Gently pour over the top of cake mix - do NOT stir.
  • Use tea towel under lid and fold over top.
  • 1 hour 45 mins - 2hrs on High

  1. So good! ? This makes a good amount and it’s quite filling so only need a small portion. Would like to make again without having to eat it all within a few days. Do you know if it freezes well?
