Thyme Osso bucco with Cumin Mash
Tasty. seasoned, slow cooked osso bucco beef shins
Serving: 8
Ingredients
- 8 osso bucco (beef shin)
- 1 tsp salt
- 2 tsp cracked black pepper
- 1/4 cup plain flour
- Oil
- 1 large onion
- 2 med carrots, diced
- 2 celery stalks, diced
- Tbsp minced garlic
- 800g tin tomatoes
- 2 tsp fresh thyme leaves
- 2 cups beef stock
Serving Side Suggestion
- Potatoes
- Sweet potatoes
- salt
- cracked pepper
- milk
- butter
- Cumin
Instructions
- Combine flour, salt and pepper
- Coat shanks, shaking off excess flour
- Heat fry pan med/hot
- Add oil
- Add shanks and brown well on both sides
- Place in slow cooker.
- Add onion, garlic, carrot and celery and cook until soft.
- Add tomatoes and thyme, stir and cook 5 minutes
- Add to slow cooker
- Pour stock over top.
- I cooked for 4 hrs on high and 4 hrs on low (more to do with where I was and what I was doing than a cooking plan ?)
Serving Suggestion
- Serve over cumin spud mash which is potatoes, sweet potatoes, peeled, cut, boiled and mashed with salt, cracked pepper, milk, butter, and cumin.

This was lovely, they usually prefer creamy sauces but the pot was scraped clean.
I discovered we had no tomatoes so easily substituted a jar of passata and a handful of cherry tomatoes from the cupboard and fridge.
I also didn’t brown/fry off anything.
