The best ever curried sausages!

Ingredients
 

  • 2 tbsp olive oil
  • 8 sausages of your choice
  • 1 large brown onion sliced
  • 1 large carrot diced
  • 2 tsp curry powder (or more or less to personal taste)
  • ½ cup chicken or beef stock - once again personal preference, I've used both and either is just as good as the other
  • 1 cup water
  • Some frozen peas
  • 1 tbsp cornflour
  • 2 tbsp water
  • Salt and pepper to taste

Instructions
 

  • Brown your sausages - not necessary just my personal preference - then slice to your desired size and place in slowcooker
  • Add the onion and carrot raw
  • Cover the sausages with the stock and water and then mix the cornflour, curry powder and the extra 2 tablespoons of water together in a small cup.(a.k.a cornflour slurry)
  • Add the cornflour mixture to the s.c and mix well
  • Cook for 3hrs on high - 6hrs on low
  • Check the seasoning and add salt and pepper to taste.
  • I always only ever add my frozen peas just before serving. They retain their colour and texture and the heat in the bowl cooks them almost instantly.
  • We like ours with mash potato, and this is seriously the best ever curried sausages! With A nice glossy sauce for your spuds to soak up

  1. Cooked this the other night added zucchini and had to use a a little more corn flour. Served with Sweet potato ! Definitely a winner

  2. Just wondering, could I just add normal (plain) flour instead of corn flour?
    Never really used corn flour before, so I don’t really know what the differences are.
    Also don’t have any due to never using it.

  5. This was amazing. Just the best. The sauce was ohhhh so good!

    I used a little guar gum to thicken as I like things to be low carb and that worked perfectly.

  6. These are definitely the best curried sausages ever!! I added a tbs of fruit chutney, a tbs of tomato paste and a little extra curry powder for extra flavour, as well as some corn kernels 🙂

    Everybody loved it. I used baba’s curry power, put in cut up potatoes, towards the end frozen mixed peas, corn and carrots and before serving I add a lil bit of coconut cream.

  8. Made the ‘best ever curried sausages’ tonight, beautiful flavour and really simple to prep. I will DEFINITELY make again and again and the only change I’d make is double the curry (we love a bit of bite) and add an extra teaspoon of cornflour at the beginning.     These Curried Sausages are so nice and they’re close to the recipe my mother used to cook. Rarely are 2nd servings wanted, no matter how delicious the meal was but in this case 2nd servings were devoured. Thanks for this recipe, it’s definately on my “make again list”.

  10. Okay so just cooking this now. The sausages aren’t completely covered in liquid for some reason. Should I add more water or stock? 🙂

  13. totally awesome and mr fussy’s request for his birthday dinner.. i replace peas with corn as i don’t pea in food!
    Also add a bit more curry for personal preferance

    Could I make them on the stove? If so, any tips?

  15. So glad I tried this, it’s so easy and tastes yummy!
    I read through the comments, so as suggested, I added 1 extra teaspn curry powder and 1 tabspn chutney.
    Will make this again for sure.
