Tasty Tomato Beef in Gravy

A tasty tomato beef casserole in a rich gravy! Low carb friendly 🙂

Ingredients
 

  • 1kg chuck/casserole steak, diced
  • 1 onion, diced
  • 2 tbsp tomato paste
  • 1 tbsp dry beef stock powder
  • 1 punnet of cherry tomatoes

Instructions
 

  • Add beef, onion, tomato paste and stock to slow cooker
  • Mix well to combine
  • Pour whole cherry tomatoes on top
  • Cook on low for 4.5hrs
  • Give it a good stir and tomatoes will break down into the meat
  • Allow to cook for another 30mins prior to serving

Notes

  • Alternatively replace stock powder with 2 tablespoons of bone broth concentrate (I love Meadow & Marrow Bone Broth which I purchase from their website)
  • Low Carb friendly

  1. Very easy and somehow it ends up with loads of liquid, it may be an idea to add something to the meat at the start to give it more flavour, I added quartered new potatoes on top of the beef/onions and under the tomatos which got cooked through

  2. Found this link on the group FB page….yummmmm. I sliced bococini (baby mozarella) and sat it under the stew on the plates…..was to die for. Bonus being a low carb dish.

  3. Is there enough liquid in this to serve with pasta? Or would you recommend adding some additional passata or diced tomatoes during cooking?

  4. This meal was delicious ! So incredibly easy. The whole family really enjoyed. I used my homemade chicken stock paste and chopped up a couple of tomatoes instead of cherry toms. Shredded it in the thermomix once cooked and served with rice and veg.

  5. I made this last night and it was delicious! So tasty for so few ingredients. I followed the recipe, with the exception of adding 1/3 cup of water after an hour as the meat was starting to burn around the edges (could just be my slow cooker though) and then with 30 minutes left I added a cornflour paste to thicken it to compensate for the added liquid.
    Could this recipe be doubled? And, if so, how long would you cook for?

  6. Unfortunately I have no form of beef stock in the house so I am trying it with worstershire sauce instead fingers crossed that it tastes ok in the end ?

  7. This is a favourite in our house but I add fresh beans and quartered mushrooms about half way through the cooking time. It is delicious

  8. This was really nice! I enjoyed it and loved the tomatoes. And there was enough liquid from everything once it was all cooked. I am following a low carb, high protein, calorie controlled way of eating and having recipes like this makes it so easy! I can try different things all the time. I served this with a steamed veg packet. I also used 1 beef, 1 chicken, and 1 vegetable stock cube in the slow cooker instead of beef stock powder. I also lowered the meat amount to around 600g, and it still fed two adults and two children. This was only 291 calories, 5.4g carbs and 49g protein per serve. So this is an excellent meal that you can easily serve with steamed veg. Very filling.

    Had this for dinner last night. Hubby literally licked the place. Said that slow cooker is the best this you have ever bought. Saw the left overs in the fridge this morning. Hope we don’t have to wait until dinner for that. He polished it off for lunch . The gravy was the best and I had reservations with the no liquid. Every recipe on this site is amazing. Five stars for every one I have tried so far

  10. Beautiful tasty meal. I made it exactly to the recipe. I added some steamed small potatoes at the end, may add them raw at the beginning next time. Served with crusty rolls. Lovely flavour and such a hearty comfort meal.

  11. Really tasty meal. I halved the recipe but it still made enough to freeze for another night. I’ll keep this one on rotation especially in the colder months. OH licked his plate it’s that good & so easy. Thank you Paulene.

    Second time making this recipe only this time I used 1/2 tin tomatoes (found in the freezer) instead of fresh tomatoes, just as tasty and again hubby licked his plate!
