Taco Chicken

Taco Chicken

Ingredients
 

  • 1 whole, raw chicken (mine was 2kg approximately) *do not cook from frozen*
  • 1 x 35g taco seasoning powder packet

Instructions
 

  • Place chicken directly onto base of slow cooker, breast down
  • Make 8-10 piercings over the chicken with a sharp knife tip
  • Sprinkle 2/3 of taco seasoning over the chicken and rub into chicken and into cuts on the chicken
  • Sprinkle remainder of seasoning on chicken to finish
  • Cook on AUTO for 4hrs
  • Lovely served with salad and optional dollop of sour cream

NOTES

  • I spooned some of the cooking juices over the chicken 2-3 times during cooking
  • Auto cooks for 2hrs on high then it becomes low
  • If you don't have auto you could alternatively cook it on LOW for approx 5hrs
  • Breast down cooking makes for a moist chicken breast when served
  • I use two egg flips to get under each end of the chicken to lift it out when cooked
  • You could cook it on a trivet or in a chicken sling if you prefer

I had this last night after a very busy day .. delicious so moist , I also basted in the juices a couple of times I did it on low for 4 hrs then panicked and popped it on high for the last hour had it with a char grilled warm potato salad my son took leftovers for his dinner tonight and he doesn’t usually do leftovers
