Sweet & Sour Whole Chicken

A slow cooked classic sweet and sour taste using a whole chicken - packed with flavour!

Ingredients
 

  • 1 large chicken (2kg)
  • 1 x 440g can pineapple pieces in juice (juice reserved)
  • 1 red capsicum (pepper) diced
  • 1/2 cup pineapple juice as reserved from can
  • 1/4 cup tomato sauce/ketchup
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 2 tbsp reduced salt soy sauce

Instructions
 

  • Place whole chicken in base of slow cooker
  • Arrange pineapple pieces and diced capsicum around chicken
  • Cook on HIGH for 2hrs
  • After 2hrs I drained and discarded all the liquid from the slow cooker (a whole chicken releases heaps!) leaving just the chicken, pineapple and capsicum behind in the slow cooker.
  • Combine reserved pineapple juice (from can), tomato sauce, vinegar, sugar and soy sauce and pour over chicken in the slow cooker.
  • Continue to cook but now on LOW for another 4hrs
  • Carefully lift chicken out at the end of cooking time (be careful to support as you lift as it will be fall apart tender - I use two egg flips, one under the chicken from each end to support it, as I lift quickly onto a serving plate)
  • Strain liquid from slow cooker and discard solids
  • Transfer strained liquids to a saucepan. Bring to boil then simmer (while stirring) to reduce sauce down by half to a glossy sauce.
  • We served ours with rice and steamed broccolini

  1. I have cooked this more than once as everyone just loves it! I cooked the chicken with the strained pineapple and capsicum for 8 hours on LOW as I wasn’t home during the day, Just before serving, I drained all the juices and added the 5 remaining ingredients for the sauce. I then thickened it on the stovetop with a cornflour/water mix and added the pineapple and capsicum back in. Once thickened, poured it over the chicken and …..yummo !

  3. Great recipe. At the end, I removed the chicken and took out all the bones. I then used the saute option on the multi cooker and added cornflour to the remaining liquid to thicken the sauce. Served with rice and the 2yo loved it!

    10/10 in my house! I followed the recipe exactly but also added 4 thigh fillets to the slow cooker with the whole chicken so it would go further. I also added some chilli flakes at the end to spice it up a bit. Then I crisped up the chicken in the oven a bit while I thickened up the sauce in the slow cooker with corn flour slurry . Served with fried rice (uncle Ben’s I cheated) and steamed Asian greens. Very delicious! Thanks for the recipe!

    We loved it. Reduced the sugar by 1/2 will try to eliminate next time I cook. Delicious served with rice and quinoa and green veges. Ideal for our caravan holiday.

    Absolutely delicious, cooked this for the first time tonight . We used some of the pineapple and capsium on top of the chicken along with the sauce. Served with rice and green beans. Thank you Paulene for sharing this yummy recipe.
