Sweet & Sour Pork Rashers

This sweet & sour flavour packed pork rasher recipe was a huge hit with our kids! Served with brown rice and steamed broccolini for high fives all round!

Ingredients
 

  • 1kg pork rashers
  • 3/4 cup sugar
  • 1/2 cup salt reduced soy sauce
  • 1/2 cup white vinegar
  • 1 heaped teaspoon minced garlic
  • 1 heaped teaspoon minced ginger
  • 2 tablespoons of yellow mustard
  • 1/2 cup canned crushed pineapple
  • 1/2 red capsicum/pepper, sliced
  • 1/2 green capsicum/pepper, sliced
  • Salt and Pepper to season
  • 1 Tbsp oil to sear rashers with

Instructions
 

  • Cut rashes into thirds
  • Using a searing slow cooker (or pan on stove top) sear rasher pieces in oil for approx 5-10mins until sealed
  • If using stove return rashes to slow cooker bowl after sealing
  • Add capsicum slices
  • Combine all other ingredients and pour over pork and capsicums
  • Cook on high for 4-5hrs
  • For the last hour I added The Tea Towel Trick to thicken the sauce a little
  • Served with brown rice and steamed broccolini

Notes

  • Due to sugar content I only drizzled a little of the sauce over the finished pork for serving but you could add as much as you like over yours

    Looks delicious Paulene! Just wondering do you leave the skin on or could you cut it off. Although the meat may collapse. Would you brown or crisp it up in a hot oven before serving ?

  2. This was amazing. Everyone loved it! Bowls licked clean. I did only use 1/2 cup of sugar, but next time I think I will use even less as it was a bit too sweet for us. I reduced the sauce at the end until it was sticky. Love your recipes Paulene.

  3. This was amazing! The family wanted seconds, but unfortunately was all gone! My husband said this was the best slow cooker meal I have done yet. The only difference I made to the recipe was less sugar, I only put 1/2 a cup in and it was still sweet but perfect. At the end of 5 hours I reduced the sauce on the browning mode in the Sunbeam Cook & Sear. Will definitely be doing again. Love your recipes Paulene.

  4. We had this last night for dinner. It was delicious. My 2 fussy girls ate it with little fuss which is a rarity when we try something new. I only put in half a cup of sugar instead of 3/4 & found it just right. Will def have it again.

    Is this with brown or white sugar? Made it once before and used brown but very sweet.. Maybe white was the go?

  6. I loved this recipe although I didn’t have 1kg of spare ribs so I did all liquids as 1/4 cup and 1 spoon of mustard and half the pineapple as I didn’t want much liquid

  7. I’m diabetic so I only used 1 tablespoon of sugar and 1 teaspoon of artificial sweetener. I’m yet to see how it turns out because it won’t be ready for another three and a half hours.

  11. Hi guys, I have no idea what pork rashers are…. but have noticed someone has mentioned spare ribs and pork belly. Just wondering what I should use as this sounds delicious

  12. Made this tonight for the first time. A big hit!
    I used monkfruit sweetener instead of sugar and I added peas and carrots.

    Next time I might 1/2 the soy and vinegar and not add sugar / sweetener but add whole tin of pineapple including juice.

    I’ll report back!!

    Aaaaamazing, hubby absolutely loved this and so did I.
    I doubled the capsicum and used some pineapple slices in the fridge (3) with juice and only half cup brown sugar. There was a lot of liquid, however I thickened with cornflour and simmered in multi cooker for last hour. Served with SC fried rice and broccoli, mm….mmmmm!!

  14. only added half cup of white sugar and in the last hour when i did the tea towel trick i added a cornflour slurry worked amazingly. might try with chicken or maybe pork fillet next time…hubby said the fat on the rashers were a bit much….not that he didnt love it…he just would remove the fat next time…..maybe i will do with chicken too ?

  15. Made this meal tonight the family enjoyed it,
    I used less sugar as my hubby is a diabetic, i only used 1/4 cup of brown sugar i added about 10 cherry tomatoes cut in half for extra sweetness i also added sliced carrot and about 1/4 Cup of pineapple juice from the tin of pineapple pieces as I preferred the pieces instead of crushed pineapple.
