1 large sweet potato
2 tsp oil
1/4 tsp cracked black pepper
1/4 tsp dried thyme
1/4 tsp garlic powder
1/4 tsp onion powder
1Line slow cooker with non stick baking paper
2Peel sweet potato and cut into thick wedges
3Place sweet potato into a large bowl,add all other ingredients and stir to coat well
4Lay sweet potato in single layer on baking paper
5Cook with tea towel under lid on HIGH for 1hr
6(times may vary with slow cooker so check they are tender when complete)
7Produces a moist, soft wedge... not dry as oven wedges can be, or oily as deep fried wedges are :)
8Serve with light sour cream and sweet chili sauce
9Also lovely in a salad :)

By all means, as it states, if yours is different adjust as needed 🙂
The sweet potato does not cook completely with just one hour on high. I have cooked potato wedges in a slow cooker and it takes 4 hours on high to cook.
