Cooked in a small 1.5L slow cooker. A perfect side dish!

Sweet Potato Bake

A lush sweet potato bake - a nice twist on the regular potato bake - so good! Cooked in a small 1.5L slow cooker. A perfect side dish!

Ingredients
 

  • 1 extra large sweet potato or 2 medium, sliced (whatever fits in your 1.5L slow cooker)
  • 1 medium brown onion, thin sliced
  • 200ml cooking cream
  • 20g French Onion soup mix (1/2 a regular pkt which is usually 40g)
  • 3 Tablespoons of sweet chilli sauce (I prefer sugar free version)
  • 1.5 cups of grated tasty cheese

Instructions
 

  • Layer sweet potato and onion to fill slow cooker almost to top
  • Combine the cream, soup mix and sweet chilli sauce and just 1/2 a cup of the cheese
  • Pour this mix over vegetables and cook on low in 1.5L slow cooker for 2hrs or until almost tender (not mushy)
  • Add the remaining 1 cup of cheese on top and cook for an additional 20mins to melt cheese nicely and finish cooking to tender
  • No tea towel required

    This is a really nice side dish I am only going to put 2x tablespoon of sweet chilli in mine next time as it was a little hot may have been my sauce as I’m getting to the bottom of Chilli bottle lot seeds in it.

  2. I have had this cooking for 3 hrs and its still not cooked. I used my 1.5 lt slow cooker and its the first time so not sure if its that or what. I will keep cooking, cant wait to taste it as dinner time has long passed.

  4. Made this tonight. Didn’t have enough sweet potato so did layers of sweet potato and normal potatoes. Halved the sweet chilli because its all I had left. Amazing. My husband had 2nd’s and 3rd’s. It was so good. Thank you for this recipe.

  5. I’m cooking this right now. Didn’t have any cooking cream so used coconut cream. Didn’t have any french onion soup so I used Asian laksa soup. So looking forward to how it turns out!
