Sweet Potato and Bacon Soup
It’s a variation of potato and ham soup and I make it every winter.
Serve with crusty bread and it’s just one of my favourite soups ever
Serving: 6
Ingredients
- 4 small sweet potatoes or 2 large ones, chopped in to 3-4cm pieces
- 4 teaspoons chicken stock powder
- 4 cups of water
- 4 rashers of bacon finely diced
- 2 brown onions finely diced
- 2 tablespoons of butter
- 1/2 cup of sour cream
Instructions
- Put the sweet potato, chicken stock and water into slow cooker
- Cook on HIGH for 4 hours
- Before serving, fry the bacon and onion in a small fry pan with butter and put lid on to sweat onions until soft
- Puree the sweet potatoes, water and stock
- Add the bacon and onion and stir through with sour cream
- Season with salt and pepper

I have tried something similar. My recipe included carrots and some finely grated fresh ginger.
Absolutely delicious, will be having again many times during winter. I also added a few bay leaves while cooking.
