It’s a variation of potato and ham soup and I make it every winter.
Serve with crusty bread and it’s just one of my favourite soups ever

4 hrs 25 mins
4 small sweet potatoes or 2 large ones, chopped in to 3-4cm pieces
4 teaspoons chicken stock powder
4 cups of water
4 rashers of bacon finely diced
2 brown onions finely diced
2 tablespoons of butter
1/2 cup of sour cream
1Put the sweet potato, chicken stock and water into slow cooker
2Cook on HIGH for 4 hours
3Before serving, fry the bacon and onion in a small fry pan with butter and put lid on to sweat onions until soft
4Puree the sweet potatoes, water and stock
5Add the bacon and onion and stir through with sour cream
6Season with salt and pepper
