Sweet Chilli and Lime Lamb

500g lamb pieces

1 rind of lime

1/2 juice of lime

1 chilli sliced and deseeded

1/2 capsicum sliced and deseeded

1/2 onion diced

6 mushrooms cut in quarters

75g sugar snap peas ends removed

125g baby corn

1/3 cup spring onions

1/3 cup coriander leaves

1 tsp minced garlic

1/3 cup light soy sauce

1/2 cup sweet chilli sauce


1- Lightly brown lamb in fry pan

2- Combine all ingredients in slow cooker

3- Cook on high for 3.5 hours


1Serve with rice

2It is a little spicy, but you could always leave the chilli out if you want it more mild.
