Sweet Chilli and Lime Lamb
Serving: 4
Ingredients
- 500g lamb pieces
- 1 rind of lime
- 1/2 juice of lime
- 1 chilli sliced and deseeded
- 1/2 capsicum sliced and deseeded
- 1/2 onion diced
- 6 mushrooms cut in quarters
- 75g sugar snap peas ends removed
- 125g baby corn
- 1/3 cup spring onions
- 1/3 cup coriander leaves
- 1 tsp minced garlic
- 1/3 cup light soy sauce
- 1/2 cup sweet chilli sauce
Instructions
- - Lightly brown lamb in fry pan
- - Combine all ingredients in slow cooker
- - Cook on high for 3.5 hours
Note
- Serve with rice
- It is a little spicy, but you could always leave the chilli out if you want it more mild.
