Sweet apple and sultana damper
Simple to prepare and a very tasty outcome, delicious served hot with butter or honey. Kids love it as it is being eaten within 2 hours of starting the prep.
Serving: 8
Ingredients
- 500 mls apple juice (no added sugar)
- 3 cups self raising flour, sifted
- 1 cup sultanas
- 3/4 cup splenda (sugar substitute)
Instructions
- Mix all ingredients
- Pour into a greased 3.5l sc (use baking paper if you want a less crunchier base and edges)
- Use The Tea Towel Trick cook on high for 1.5 hours
- Insert knife into damper. If it comes out clean it is cooked. Comes out doughy, add 15 minutes cooking time and repeat test

Would it be the same amount of sugar if I use that instead of splenda?
Hi Felicity. I would say yes to equal amounts of sugar as a starting point. It will come down to personal taste on whether you want more or less.
