Ingredients

1 can pineapple pieces

1 capsicum chopped

1 carrot chopped

1kg pork rashers or loin (could have less too)

3 tbsp brown sugar

1 tsp ginger

1/4 cup vinegar

3 tbsp soy sauce

"2 tbsp corn flour or potato starch

Directions

1Combine all except corn flour in slow cooker.

2Cook on low 5-6 hrs.

35 min before serving mix corn flour with 3 tbsp water.

4Add to slow cooker and mix in.

5Leave to thicken for 5min.

6Serve with rice.

Do you drain the pineapple pieces or leave the juice in?

Did this the other night very yummy! I mixed my cornflour into the pineapple juice then put in it.

OMG YUMMO. I used diced pork and added a diced onion. Next time I might add some baby corn as well. This recipe has now gone into my fovorites book.
