1 kg chicken ( thigh is best )

2 tbsp garlic

2 tbsp ginger

200ml soy sauce

100ml mirin

100ml cooking sake

1 box of cornflour


1Combine liquids, ginger and garlic

2Place chicken in sc pour over liquid

3Cook till just cooked - 2hrs on HIGH

4Pour corn flour into a bowl

5Remove chicken from sc with a slotted spoon draining excess liquid

6Coat in cornflour shaking of excess

7Place in deep fryer , not touching

8Cook till crisp ( 1 to 2 minutes ) at 180
