Stuffed roast beef for your slow cooker

Stuffing
1Tablespoon Butter
2. Rashes Bacon finely chopped
1Onion finely chopped
1 Clove Garlic or 1 tablespoon minced garlic
1cup fresh breadcrumbs
1/2 cup Parmesan cheese
1 egg
1 Tablespoon Wholegrain mustard
2 Tablespoons of both chopped oregano and parsley
1 tablespoon lemon rind
Other Ingredients
Beef approximately 2 kg piece
50 ml red wine
2 Beef stock cubes
2 onions cut in half
Gravox or cornflour to thicken gravy

2Mix all stuffing ingredients together, alternately you can fry the bacon and onion
3Cut A Deep cut in the beef and insert stuffing
4Tie with strings to secure
5Sit Beef on onions in bottom of the slow cooker
6Pour wine and stock cubes over beef
7On low 6 - 8 hours depending on Beef size
8Baste occasionally and thicken juice with Gravox or cornflour
