Stuffed Roast Beef
Stuffed roast beef for your slow cooker
Ingredients
Stuffing
- 1Tablespoon Butter
- 2. Rashes Bacon finely chopped
- 1Onion finely chopped
- 1 Clove Garlic or 1 tablespoon minced garlic
- 1cup fresh breadcrumbs
- 1/2 cup Parmesan cheese
- 1 egg
- 1 Tablespoon Wholegrain mustard
- 2 Tablespoons of both chopped oregano and parsley
- 1 tablespoon lemon rind
Other Ingredients
- Beef approximately 2 kg piece
- 50 ml red wine
- 2 Beef stock cubes
- 2 onions cut in half
- Gravox or cornflour to thicken gravy
Instructions
- Mix all stuffing ingredients together, alternately you can fry the bacon and onion
- Cut A Deep cut in the beef and insert stuffing
- Tie with strings to secure
- Sit Beef on onions in bottom of the slow cooker
- Pour wine and stock cubes over beef
- On low 6 - 8 hours depending on Beef size
- Baste occasionally and thicken juice with Gravox or cornflour
