Strawberry and Lemonade Upside Down Cake

A deliciously, moist and sweet cake perfect for afternoon tea or dessert.

Ingredients
 

  • One packet Vanilla Cake Mix
  • 1 cup Lemonade
  • 1-2 punnets of fresh strawberries
  • 1 packet of strawberry jelly (I used Aeroplane brand)

Instructions
 

  • Line your slow cooker with baking paper.
  • Slice strawberries and layer on the bottom of the slow cooker.
  • Sprinkle the packet of jelly over the top of the strawberries.
  • In a bowl, mix the cake mix with the lemonade.
  • *add this slowly until you get a batter consistency for the cake*
  • once cake mix is smooth and to a batter consistency pour over the strawberry and jelly layers.

  • Place a tea towel under the slow cooker lid.
  • cook on High for 1.5 - 2 hours

  • Once the cake is cooked a skewer should come out clean with a few crumbs - if any.
  • Turn slow cooker off and let the cake cool before lifting out and carefully turning the right way up on to a plate.
  • Gently peel off the baking paper....... enjoy!

  1. Cooked this first time in my baby 1.5l SC, bought into work to treat colleagues we all loved the flavour. The fruit layer is divine, tangy with the lovely vanilla cake goodness ??? – a real winner. Will make this one again for sure!

  2. I made this tonight and really enjoyed the taste , didn’t look perfect but I may need to grease the paper next time as edges seem to stick . Yummy !!
