Sticky Ribs and Medallions

Ingredients
- Rib Rub:
- 1tsp salt
- 1tbs paprika
- 1tbs mustard powder
- 1/2 tsp cayenne pepper
- 1/4 tsp black pepper
- Three 333s bbq sauce
- 2 racks of pork ribs
- 6 pork medallions
Instructions
- Mix all spices together and coat ribs and medallions in rib rub, preferably the day before and left in the fridge overnight.
- Place in slow cooker cover in bbq sauce, cook on low for 8hrs.
- Once done place in foil tray or dish and put another basting of bbq sauce over them, placing under the grill for 5-10mins so sauce goes all sticky.
- I serve over a cheesy bacon mash 🙂
