A deliciously juicy pudding with a lovely citrus hit.

  • Yields: 5-6 servings

Ingredients

SPONGE

200g light brown sugar

200g butter

3 eggs

200g self raising flour

Zest of 3 lemons

Juice of one lemon

SAUCE

100g light brown sugar

100g golden syrup

Juice of 2 lemons topped up to 300mls with orange juice

Directions

1Mix butter and sugar until creamy

2Add and beat in eggs

3Mix in flour until smooth

4Fold in lemon zest and juice

5Pour in greased slow cooker bowl

6Put all sauce ingredients in a microwavable jug and heat for 90 seconds

7Stir to mix and dissolve sugar

8Pour over sponge mix

9Cook on HIGH for 2 hours with tea towel under the lid - Tea Towel Trick
