St Clements self saucing pudding
A deliciously juicy pudding with a lovely citrus hit.
Serving: 5
Ingredients
- SPONGE
- 200g light brown sugar
- 200g butter
- 3 eggs
- 200g self raising flour
- Zest of 3 lemons
- Juice of one lemon
- SAUCE
- 100g light brown sugar
- 100g golden syrup
- Juice of 2 lemons topped up to 300mls with orange juice
Instructions
- Mix butter and sugar until creamy
- Add and beat in eggs
- Mix in flour until smooth
- Fold in lemon zest and juice
- Pour in greased slow cooker bowl
- Put all sauce ingredients in a microwavable jug and heat for 90 seconds
- Stir to mix and dissolve sugar
- Pour over sponge mix
- Cook on HIGH for 2 hours with tea towel under the lid - Tea Towel Trick

Made this for my family and they loved it. Served warm with ice cream. Sweet and tangy it certainly was a hit.
I want to make this for friends for lunch but need to go out for 4 hours will this rise and do the cake thing if it’s cooked on low for 4 hours? Rather than high for 2.
