Spicy Lamb and Vegetable soup
Serving: 8
Ingredients
- 1kg Diced Lamb
- 4 diced large carrots
- 4 diced celery stalks
- 1 tin chickpeas, drained
- 2 tins diced tomatoes
- 1 tin condensed tomato soup
- 1 tin lentils
- 4 diced onions
- 2 cups sliced mushrooms
- 4 rashers diced bacon
- 2 cups dry pasta
- 8 cups beef stock
- 1 diced zucchini
- 2 tsp black mustard seeds
- 2 tsp cumin
- 2 tsp ground coriander seeds
- 4 tsp smokey paprika
- 2 gloves minced garlic
- Salt/Pepper to taste
Instructions
- Brown lamb and add to slow cooker,
- lightly fry onion, bacon and mushrooms and add to slow cooker.
- Add all other ingredients except pasta to slow cooker and cook on low for 8 hours.
- 1 hour before finish, add pasta. Serve with fresh crusty bread.
