Sombrero Chicken

Ingredients
 

  • 1kg chicken pieces of your choice (fillets, drums, wings whatever you like)
  • 1 packet of taco seasoning
  • 1 jar of apricot jam (approx 450g)

Instructions
 

  • Place chicken in slow cooker.
  • Combine jam and taco seasoning well then pour over chicken.
  • Cover and cook on low for 4-6hrs depending on your slow cooker
  • *This was SO yummy!*

  1. I did this tonight with whole chicken breast fillets and the shredded and added them back into the sauce for half an hour. Served in Taco Boats with lettuce, perino tomato halves, cheese, sour cream, avacado and Mexican salsa. Deicious!

  2. Had this tonight. It was soooo tasty and mighty easy to prepare. Had with mashed potato and the sauce was great with it. Definitely have again!!!

    Made it with chicken thighs then shredded it and added it back into the sauce. Served in tortillas with sour cream, tomato, lettuce and avocado.

  4. made this tonight it was delish kids loved it , we added a little sour cream and served like we would tacos , id add a little more taco seasoning if you like things a little more salty . will be def making again.

  10. Love this recipe! Used chicken breast (I think thigh would be better though), shredded breast in cooker in last hour and used to make chicken tacos. Delicious and so easy!

  11. My husband and I loved this. We made it with chicken wingettes, as that was all we had. Only three ingridents so it was simple and easy. I cooked it on high for about 4 hours in the slow cooker. Delish. Its been added to our fortnightly meal planner ?.

    I made it using a low sugar jam so it wasn’t as sweet.

  15. I love this one, I have found different brands of jam changes the flavour. Some make it taste more apricot. I found Cottees or IXL is better. I’m not an apricot flavour fan.

  16. We just used 2 chicken breast and one packet of seasoning and one 250g jar of Cottees jam. Turned out really yummy and served in taco boats with cucumber, capsicum, red onion, avacado and cheese. Fed 4 of us easily ?

    I have made this so many times and it never fails to please. Sometimes I slice up an onion and put that on the base for a little extra boost. I have passed this recipe to so many people to try and never had a single complaint about it. Super easy, not expensive to make and so tasty.

  21. Loved this meal! I added sour cream, a tin of apricots, and lessened the jam. Also put in carrots and beans! Delicious!

  22. I used apricots that I had stewed and added an onion. For the last half hour I added Asian greens. Totally agree with what everyone says this is simple and so tasty, will definitely be making again.

  24. So this recipe is becoming a favourite so I have made this for a BBQ and I have changed it from apricot jam to orange marmalade and had a little taste test it is yummy tastes a bit sweeter

Made this today, wasnt sure about it as Im not a fan of apricots and my hubby isnt a sweet tooth but OMG, it was delish, I only had home made jam and I added Cayenne pepper as my hubby likes a kick and it was of so good, I think it will certainly be a part of our regular feeds. I made this tonight and it was fab, I wasnt sure about making it as Im not a fan of apricots and hubby isnt a sweet tooth but so glad I did we both really loved it, I only had home made apricot jam and I added Cayenne pepper as my hubby likes abit of spice, I will definately be making this a regular in our house, so quick and inexpensive.     I cooked with 10 drumsticks and served half with Microwave Mexican rice, carrots and beans. Shredded the remainder for tomorrow nights tea – sombrero chicken , mex rice , lettuce, tomato/ cucumber, sour cream on burritos.

  28. I’ve made this a few times now and it’s delicious every single time. I only use either breasts or tenderloins and it never fails. I serve it with mashed potato, sweet potato and mixed veg. So good.

  29. My absolute favourite dish! It’s my go to for dinner guests. I serve it with mash and greens. I also line the sc with an opened oven bag so no sticky cooker to clean! Forever grateful to Pauline for recipes.

  30. This was amazing and loved by our family of 6. I used 4 chicken breasts and shredded before serving. We had it in wraps with salad. I’ll try with chicken drumsticks next time. So easy and tasty!

    I have to be honest…. I really didn’t have high hopes for this one, but hey…. 3 ingredients, I’m super lazy sounds like it’s at least worth a try!
    Well geez…. I was just so wrong! This very simple 3 ingredient yummy bomb of flavour is such a winner in our house, I looked up from licking my bowl out, to see my husband doing the same thing!

  33. This is my new favourite chicken dish- it’s absolutely delicious! I made it with 2kg of chicken drumsticks and used 2 jars of jam and 2 packets of taco seasoning. I pulled the meat off the bone, mixed it in with the sauce and served in tacos one night and in burritos the next. Hubby and my 2 year old licked their plates clean!

    This recipe is brilliant and on our fortnightly rotation. Serve with rice, mash and veg or take the chicken off the bone and use in wraps. I have to double or triple (3 x taco seasoning but only 2 x jam is our preference) as the kids love it!

    Absolutely delicious
    Made it for the first time today added 1 diced onion, 1 diced red capsicum, diced celery, and spinach leaves. Served with hash browns. Will definitely be making it again. Yummo!
