Slow Cooker Rocky Road

Ingredients
 

  • 600 grams chocolate (I used store brand milk and dark chocolate)
  • 1/2 packet marshmallows (about 20)
  • 3/4 cup peanuts (or nuts of choice)
  • 3/4 cup sultanas (or any other dried fruit)
  • 1/2 cup shredded coconut

Instructions
 

  • Place chocolate in slow cooker and cook on high, uncovered until chocolate has melted
  • Stir every 15 minutes (mine took an hour to melt)
  • Add remainder of ingredients
  • Cook for a further 5 - 10 minutes until marshmallows have started to soften.
  • Pour or ladle into a tray, lined with baking paper (I used 20 x 30 cm slice tray)
  • Refridgerate until set.
  • Cut into desired size pieces.

  1. Why waste 1 hour to melt the chocolate. Then scrape it out . Easier in microwave or over hot wafter. Less time. Confused.

  2. Ive made this rocky road and i tell ya its waaaay tastier than a shop brought bulk manufacturered block of rocky road lol.

Have never made rocky road in my life and had leftover ingredients from my daughters party using a bag of mixed nuts,Cadbury melts and chochips and leftover coloured mini marshmallows wasn’t sure if I was able to make this recipe until I asked the lovely paulene for help and I’m glad I did as I have made them and they became a huge hit in my house and told they are way better then the store bought ones and that they didn’t need any coconut added to them they are perfect on their own. Will certainly be making them again 😊

  4. I made this last year and it was a huge success..I get to go off and do other exciting household jobs for an hr😅
    Or I could read a book .that’s why the slowcooker is so good..I don’t have to worry about burning the chocolate too..can’t wait, hope it turns out as good as last years. Just popped it on.
