4 Ingredients or LESS!, Condiments/Preserves, Fruit
January 5, 2015
4 hrs 10 mins
Zest and juice of one lemon
1x 50g pack Jamsetta.
1Cut apricots into half's/quarters and remove stones.
2Add apricots, sugar, lemon & zest to the slow cooker.
33hrs on high with the lid on, stirring occasionally; 1hr on low, lid off stirring occasionally.
4Blend (I like it smooth and thick v's chunky).
5Jamsetta is optional, makes it set thicker. I got a cup, used half of the jamsetta pack & some of the pured fruit to mix and added it in. Bottled it up and done!

Made this twice in the last 2 days. First batch was very runny. Second batch, I cooked for an extra hour on high and set perfectly. I have a Breville Meal Maker (model SLC50) slow cooker.

When I have made it in the past on the stovetop I always put a couple of kernels in. Apparently it helps with setting. This looks just so easy. Happy New Year Pauline x
